Tuna Nicoise Pasta
Drake sometimes comes home from the grocery with "little surprises." This week it was odds-and-ends pieces of fresh yellowfin tuna that he got for a very good price. There wasn't enough for us to each have the tuna as a entree, so I made some Nicoise-inspired pasta and put the grilled tuna pieces on top of it. Turned out great.
6 oz. fresh tuna pieces
1/2 recipe Julia Child's Mustard-Lemon Marinade
3/4 lb. fresh green beans, trimmed and cut into 1" lengths
1 14.5 oz. can diced tomatoes, drained
1/4 c. pitted Nicoise olives, coarsely chopped
1 T. capers, finely chopped
2 T. Anne's sun-dried tomato pesto
6 oz. linguine or other pasta
Marinate tuna in marinade for about 30 minutes to an hour. Meanwhile, prepare pasta ingredients.
Steam green beans just until tender, about 6 minutes. In a skillet, mix together cooked green beans, diced tomatoes, olives, and capers. Heat over medium heat.
Skewer tuna pieces and grill until medium-rare.
Prepare pasta according to package directions. Mix pasta into skillet with green bean mixture. Add sun-dried tomato pesto and serve with grilled tuna. Serves 2.
