Potato salad, food of the gods. I do the midwestern mayonnaise thing, as opposed to the German vinegar thing - my twist is to add either a lot of cilantro or a lot of dill, depending on what I can find. I have to start using 'vegennaise' now, we'll see how that goes. But the hard-boiled eggs stay in; some things should not be compromised.
I'm with you on the mayo version. I like German potato salad, too, but when it comes to something to go with bbq ribs, only genuine Midwest potato salad will do!
The food sounds good even though the Bears lost. Our family potato salad has both vinegar and mayo. The warm, boiled potatoes marinate overnight in cider vinegar, oil, diced onion and salt and pepper. The next day boiled egg, sweet pickles, celery and green olives are added as well as the mayo. Why have only one fat when you can have two!
That recipe sounds like the best of both worlds!
