Caramel making
About once a month or so, I make a batch of caramels.
These are special caramels for Drake, doctored up with EGCG powder I pull out of Teavigo capsules. EGCG, at least in the lab, seems to slow the growth of CLL cancer cells. Human trials are in progress, but there is enough anecdotal evidence that it's effective in humans that I figure it's worth doing. And, even if it turns out not to be effective, at least they are tasty! The idea with putting EGCG in caramels is that the compound is more effectively absorbed through a membrane (such as the inside of your cheek, which is where you are supposed to slowly dissolve the caramel). I've been making these since November of 2004, when Drake stopped chemotherapy. I still use a candy thermometer, but I don't really need it; I can tell by sight and feel when the caramel is ready.
